Pulled Pork Sandwiches with Sriracha BBQ Sauce

This pulled pork sandwich with a spicy twist from My Recipes is a sure hit. We’ve tweaked the recipe a bit to suit our tastes.
Blend 3 tablespoons of brown sugar, 1 tablespoon ground coriander, 1 tablespoon of onion powder, 1 tablespoon chili powder and 3/4 teaspoon salt. Rub the mixture on one 3 1/2-pound boneless pork shoulder trimmed and cut into pieces.
Combine ½ cup ketchup, 1/3 cup seasoned rice vinegar, 2/3 cup water, 1 tablespoon of soy sauce, 2 tablespoons Sriracha, 3 minced garlic cloves, and 1 tablespoon peeled minced ginger in a slow cooker. Sir well and add the pork. Make sure that the pork is coated with ketchup mixture. Cook on low for 8 hours or until tender. If you’re using a Dutch oven, follow the instructions but cook the pork on medium-low for 3 hours and 15 minutes or until pork is tender. Skim fat from the surface and remove the pork from the cooker. Stir in an additional 1 tablespoon Sriracha. Shred the pork and add back to the cooking liquid. Stir to coat the pork shreds evenly.
To serve, place about 3 ounces of meat mixture on whole-wheat hamburger buns for each serving.
Grilled Pesto Chicken and Tomato Kebabs

This chicken pesto recipe from Skinny Taste is a favorite of ours and its sure to be a crowd pleaser.
Pulse 1 cup of fresh basil with 1 clove of garlic, ¼ cup grated parmigiano reggiano, salt and pepper to taste in the food processor until smooth. Slowly add 3 tablespoons of olive oil while pulsing. Marinate 1 ¼ pounds skinless chicken breast cut into 1 inch cubes with the pesto for a few hours. Skewer chicken with cherry tomatoes (4 cubes of chicken and 4 cherry tomatoes for each skewer).
Heat your grill pan over medium heat and spray the grates with oil. Cook the chicken on the hot grill for 3 to 4 minutes, turn the chicken and continue cooking until the chicken is cooked through for about 3 to 4 minutes.
Skinny Classic Potato Salad
Calories: 220 calories per serving, serves 8
No picnic is complete without potato salad. This potato salad from Betty Crocker (of all places) has 53% fewer calories, 74% less fat, 75% less sat fat than the original recipe. Our version has a few additions.
Boil 6 unpeeled medium red potatoes for 20 to 30 minutes until fork tender. Drain, cut potatoes into cubes and set aside. In a large bowl, place potatoes, 2 chopped hard boiled eggs, 2 stalks of celery thinly sliced, ½ cup minced cornichons, and 1 medium sized onion chopped.
In another bowl, mix ¾ cup reduced-fat mayo, ½ cup fat-free sour cream, 1 tablespoon yellow mustard or Dijon, 1 teaspoon cider vinegar, ½ teaspoon salt, ½ tablespoon sugar, and ¼ teaspoon pepper.
Add the dressing to the potato mixture and toss until potatoes are evenly coated. Refrigerate for at least 1 hour before serving.
Boozy Fruit Salad
Calories: 75 calories per serving, serves 8
Combine 2 sliced nectarines, 1 sliced kiwi, 1 cup raspberries, 1 cup seedless grapes (halved or whole), ¾ cup grapefruit (cubed), 2 tablespoon sugar, 2 tablespoon Grand Marnier in bowl, and a few torn leaves of mint. Mix gently so the sugar dissolves in the fruit and Grand Marnier. Refrigerate for at least 30 minutes. Serve cold.
Raspberry and Rosé Sparkler
Calories: 93 calories per serving
This spectacular rosé drink from Country Living hits the spot and is perfect for any picnic! Mash 2 cups of raspberries with 2 tablespoons of sugar and 2 tablespoons of lemon juice. Transfer in a pitcher and top with 1 bottle (750 ml) of chilled sparkling rosé. Serve with ice, sliced lemon and raspberries. For a non-alcoholic version, replace the sparkling rosé for non-alcoholic sparkling rosé.
